Super-Chili-Bowl

1 T Extra Virgin Olive Oil
1 medium Onion
1 t garlic
2 Jalapeno peppers
1/2 t salt
1/4 t Red pepper
2 T Chili powder
1 1/2 t Cumin
1/8 t Cinnamon
2 lbs Ground Beef (80/20)
14.5 oz Diced Tomato (can)
1 1/2 cup shredded Monteray Jack Cheese
 
Directions:

  1. Heat up the broiler in your oven - we'll be using it later
  2. In an oven-proof skillet - heat olive oil, onion on medium heat until onion is golden (about 3 minutes).  Add garlic and jalapenos and cook until fragrant (a minute or so).
  3. Add salt, red pepper, chili powder, cumin, cinnamon and ground beef to skillet. Cook until browned, about 5-6 minutes, stirring occasionally. Drain excess liquid from the pan.
  4. Add tomatoes, and bring to a boil. Sprinkle cheese over top. Place 5 inches from heating element, and broil just until melted, about 5 minutes.
  5. Enjoy .... makes 8 servings.
